These are the words which Russian director Andrej Tarkovskij, visiting the most charming locations of Italy
alongside Tonino Guerra while shooting the film Voyage in Time, used to describe our territory,
the natural habitat of the most precious truffles.

The woods of the Apennines are the perfect location for the growth of truffles. The composition of the soil and its mineral content, the moisture level, the seasonal climate and the presence of the plants most suitable to symbiosis with the spores create a virtuous circle of spontaneous production of the main and most sought-after varieties of truffle.

Our profound knowledge of the local area is the criterion on which our idea of sustainable and magnificently imperfect luxury is based.

White Truffles Tuber magnatum Pico
The most sought-after truffle of all, truly the king of the woods. It matures in our woodland in Autumn. Its intense and unmistakeable flavour is shaved into wafer-thin slices to make even the simplest dishes truly luxurious.

Bianchetto Truffles Tuber albidum Pico
A lesser variety of white truffle, available in late winter and at the beginning of spring. It has a strong and distinctive personality, with an intense flavour profile.

Black Winter Truffles Tuber Melanosporum
The black truffle par excellence is native to the Apennines, where it grows abundantly throughout the winter. It is a more versatile ingredient, and lends itself to any dish, minced or shaved wafer-thin.

Black Uncinatum Truffles Tuber Uncinatum
This truffle is distinguished by its large size and warm hazelnut aroma. It grows in Autumn throughout the Apennines, and it is best savoured in wafer-thin shavings or else minced to enrich sauces and condiments.

Black Summer Truffles Tuber aestivum Vitt.
The most common woodland treasure, but no less flavourful for it. The summer truffle abounds in the Apennines in summer months. It is widely used to enhance traditional recipes with its fresh, delicate aroma.

We classify each truffle on the basis of parameters which make it unique, creating a unique code which allows it to be identified and provides traceability of the location and date it was found. It is weighed and analysed on the basis of its external and internal colouring, and its aroma, texture and level of maturity is assessed.

On the basis of their characteristics, we classify truffles as follows:

CLASSIFICATION

We classify each truffle on the basis of parameters which make it unique, creating a unique code which allows it to be identified and provides traceability of the location and date it was found. It is weighed and analysed on the basis of its external and internal colouring, and its aroma, texture and level of maturity is assessed.

On the basis of their characteristics, we classify truffles as follows:

Natural masterpieces of imposing size: we award this classification to truffles weighing over 100 grams, which are often irregular in shape. Edible sculptures of striking appearance, which demand to be shown off at the table as works of art, to be enjoyed with the eyes as much as with the palate.

This selection encompasses large truffles which are regular in shape, the expression of nature’s perfect imperfection. Round and smooth, and weighing between 30 and 100 grams, they are pleasing to look at, and exquisite to taste.

This is a selection which fully reflects nature’s intentions: most of the truffles we find fall into this category, weighing between 10 and 100 grams, irregular in shape and in some cases with small imperfections which lend personality to each truffle.

This category of truffle will either be very small or large with splits, cuts or holes, which nevertheless only affect its aesthetics, not its flavour. Truffles in this category weigh between 5 and 100 grams.
