INNOVAZIONE
Two years of studies and careful research to present this project that is not a simple display case, but a proper habitat created with cutting-edge technologies and a brand-new ultrasound humidity emanation system. A sophisticated technology that splits water molecules making them lighter, creating a mist that lightly touches the truffle. By keeping the right humidity balance, it satisfies one of the main needs of this hypogeal mushroom, consisting of 80% of water. This way truffle is kept in the best conditions for a fairly long period, always in accordance with its natural life; truffles with a smooth peridium last for 10/15 days, while the ones with a verrucous peridium last for 20/25 days, always keeping in consideration their initial level of ripeness, as we usually do for fruits and vegetables.

The Hypogeal Display Case has been designed and built for the exclusive use of preserving fresh truffle. After studying all the possible building materials, the Krion™ has been selected, being by nature antibacterial, hypoallergenic, eco-friendly, 100% recyclable, non-porous and especially suitable for food contact.
DESIGN
A combination of design and functionality that keeps the truffle at the correct temperature and humidity, by creating its NATURAL HABITAT. The display case furthermore allows restaurateurs not only to preserve the truffles in the best way possible by extending their life, but also to show their customers this precious hypogeal mushroom, a jewel of the soil, by adding a classy touch to their restaurants. Dimensions: height 140 cm, width 60 cm, depth 60 cm.

Thanks to it, it’s possible to perfectly preserve and display all the 5 truffle species that can be found all year round, avoiding the physiological weight reduction of the truffle thanks to its technology, ensuring the perfect balance between humidity and temperature, and allowing the truffle to maintain its organoleptic properties and its unmistakeable aroma for as long as possible.
