BLACK UNCINATUM TRUFFLES Tuber Uncinatum
The name of the Black Uncinatum Truffle (Tuber Uncinatum) derives from the hook-shaped form of its spores. In terms of its characteristics, it is very similar to the black summer truffle. It is a truffle which varies in size from that of an egg to an orange, sometimes even exceeding 10 cm (4”) in diameter.
SEASONAL AVAILABILITY
The harvesting season ranges from September to December, although it is also possible to find them towards the end of winter.
IDENTIKIT
The peridium is black, with flattened pyramid-shaped warts. The gleba is initially whitish, then hazel-coloured, and finally brown with tight, slender, whitish veining.
FLAVOUR/AROMA PROFILE
It has characteristic hazelnut notes and an intense aroma.
USES
It is commonly sliced very finely with a truffle shaver, or else ground to dress up Italian pasta dishes and main courses.
